Cobaw Roo

Take the back straps of a young roo - about 18 month out of the pouch.

In cool weather hang in a breeze, or leave in the refrigerator over night for the meat to set.

Lay in dish of best olive oil, ginger & soy for 2 hours.

Cook on hotplate, baste with remaining oil, ginger & soy.

Remove from bbq when nicely browned all over and allow to set on wooden platter.

Slice and serve with fresh garden salad or roast vegetables.

Break out a very good local red and enjoy some of our best wild food!
